Sue's Famous Blackberry Crisp

Let me start this post with a huge disclaimer.

This blog is not a cooking blog.

It even doesn't pretend to be a cooking blog.

It doesn't play one on TV or the Internet.

But, I came across a batch of wild blackberries in our field last night and had to make something fabulous with them.

I should warn you though, blackberries don't like to be picked. They wage war on you the minute they see you skipping up to them with an empty Cool Whip container.

For starters they have prickers the size of kitchen knives. And the beetles were everywhere. I was sure they were in my hair so I whipped my head around every couple minutes like Taylor Swift in concert.

Then I stepped into the berry patch and my flip flop fell off.
While trying to wiggle it back on I lost my balance (probably dizzy from all the hair whipping) and the vines wrapped their knives around me like a fly in a spider web. It was chaos. I felt like I was in an episode of Curious George.

Eventually, bruised and bloodied I stepped into the house and had a nice bunch of berries.







I took them out of the Cool Whip container for this lovely, pixel-y picture
taken from my cell phone. Hey if you want The Pioneer Woman, hop over there. I would!



So, I searched online for a recipe and ended up using bits and pieces from each one to make my own blackberry crisp.

Sue's Famous (it's my blog I can say that) Blackberry Crisp

3-4 cups blackberries
1/2 cup white sugar
2 TBLS of flour (because the berries get runny when baked)

Mix and put into buttered baking dish.

Then mix:

1 c raw oats
1 c brown sugar
1 c flour
2/3 c melted butter
1/2 tsp cinnamon

Chopped walnuts..if you like them...I do. So I put in lots.

Then dump, (that's how I do it) the mixture into the baking dish on top of berries.

Bake at 375 until topping is browned and berries are a bubblin!





If you serve it hot with ice-cream, your ice-cream will be insanely jealous that it's not the star of the show. But go for it, I've heard that ice-cream never holds a grudge.

Praise and Coffee Night via Twitter

I love the idea of traveling to each of your cities for a Praise and Coffee Night, and while that is on my bucket list, I don't think it will be happening soon.

So instead I came up with a way to virtually host a Praise and Coffee Night on Twitter.

Yes, Twitter.
Do you Tweet? I Tweet and I love to Twitter.

So this Thursday night from 9-10 PM (or so) Eastern Standard Time EST.
We will be having a virtual Praise and Coffee Night via Twitter.

The way to join the party on Twitter is by using the Twitter search button and search for #pcnight and then using #pcnight in all your tweets.

We will be connecting, encouraging and inspiring one another online!

Also, we will host some great giveaways.
To win the giveaways, you will need to answer questions based on things mostly found in our online magazines.

Catching Up

Hello girlfriends!!
I hope you are having a great summer. We have been busy and this week is Lauren's 7th birthday so the celebrations have begun!

I apologize for not blogging so much anymore, I've been putting my time and energy into the magazine and a few other projects I'm working on. I'll share more on that later.
Thanks for sticking with me, you all are precious to me!

The number one complaint I hear about Christians and church leaders these days is that they are not genuine. People are put off by the seeming “network
marketing” style technique that seems to be pervading churches lately. Of course
this is not true of all Churches or Christians, in fact I would say it’s not true of most. But I admit that I’ve found myself responding with caution and
wanting to ask “what’s in this for you?” as I’m charmed by certain leaders.

The Summer Praise and Coffee Magazine!

The Summer 2011 issue is published!





Again, I am so touched by the stories of women who walked through the hard times and clung to the God who loves them.

From a mother who saw her daughter engulfed in flames.

To a wife who while working in the mission fields of Africa only to find that her husband had been cheating on her. That same husband working side by side with her to help aids victims.

And the mom who faced the painful fact that maybe there was more to the story when her young son didn't make eye contact with anyone else. Maybe he was autistic.

All the while God is bringing comfort and healing in the midst of these painful trials. And eventually these wonderful women find a reason to laugh and enjoy the journey that they are on.


Real women ~ real stories.


Another very exciting part of this issue is a new column by Melanie Shankle, some of you know her as 'big mama.'
She debuts her Fashion Cafe with us, sharing 10 darling pieces that would look great in our summer wardrobe.
